In Toamasina, we visited a local market. Fresh vegetables and fruits, as well as the region’s famous vanilla, were piled high, and local people were enjoying their shopping. Some of the items were familiar to us, while others were foods we were seeing for the very first time. By asking the vendors about their flavors and how they are prepared, we were able to experience a valuable glimpse into the food culture rooted in this region.
